Do you get laid how to make homemade fermented sauerrüben ? We pretty much always have some blend of homemade sauerkraut bubbling forth on the counter or stashed aside in the icebox . But years ago , while looking through my mother - in - law ’s German cookbooks , I saw a formula for sauerrüben .
Sauerrüben is similar to sauerkraut in compliments to the method acting used to ferment it and also by how it ’s enjoyed . But instead of dough , homemade sour sauerrüben is made with turnip and rutabagas .
As much as I like the traditional blend of radical vegetable for sauerrüben , I actually favour it made with just rutabagas . Unlike traditional plain lucre kraut that ferment in five - plus weeks , this ferment only accept five to seven day . It ’s a fast alternative to the usual plain Krauthead and a unique twist that is n’t quite as common here in the states .

Wash Swedish turnip , trim ends , but pull up stakes on the skin . Shred the rutabagas with a large common grater ( not fine ) . Collect tear up in a nonreactive bowl , such as glass , plastic or hearty stainless brand . sum up in the salt and mix well .
Mix until you’re able to find fault up a fistful and squeeze liquid from your clenched fist . Once liquid accumulates , you could channel the Swedish turnip into a clean quart shock . Leave 1 to 2 in of headspace . apply your fist to tightly fill up the jolt , removing any air pouch . rain cats and dogs in any excess liquid from the sports stadium in the jar as well . This liquid is the seawater that the rutabaga will ferment in .
Once the jolt are filled there should be enough brine to cover the shred . If there is not enough liquid state , check off again in the morning and more often than not , there will be enough . You will need some sort of weight to keep the grated rutabaga pushed under the brine .

Keeping the shreds submerge under the brine is the key to a successful zymosis . There areweights specifically made to go jolt , but you may also get creative ; see billet segment below on alternative options . Wipe off the lip of the jar with a blank dampened towel , and sum the mason jar canning lid and tightly screw on the anchor ring .
Fermentation
This is a 5 - to-7 day fermentation . The temperature in the space where you are fermenting in will declare how long it take . The ardent a room , the quicker it will ferment . Ideally , ferment between 60 to 75 level Fahrenheit and keep out of unmediated sunlight .
Burp the shock daily , especially at first when the zymolysis is very fighting – unscrew the lid briefly and reduce it back on to allow any built - up flatulence to unloosen . At least once per 24-hour interval , you ’ll have to use a uncontaminating utensil to push down the weight and submerge the rutabaga again . scoop out aside any piece of intellectual nourishment floating on top of the brine to avoid mold .
Taste test the ferment after 5 days . If it still tastes raw , let it to work another couple of day and savour again . Once fermentation is complete to your liking , transfer the jar into the refrigerator , with the brine and all .

Notes
As with traditional sauerkraut , this recipe can be pluck to your like by adding other vegetables , such as Daucus carota sativa , onions or red-hot capsicum . Or , add extra seasoning such as toasted Carum carvi seeds or bay leaves .
